Rosso Vermouth

This is the Vermouth that started it all. The first Vermouth we set out to make and spent 3 years developing and diving into winemaking and botanical extraction research. We uncovered techniques, botanicals and formulas from the great, long-forgotten, 19th-century Vermouth houses of Italy and North America. We combined this knowledge with a modern and empirical approach using incredible wine from the Cowichan Valley and a love for everything Apéritif.

This Vermouth is made in a traditional Italian Rosso Vermouth style for use in classic cocktails, but with enough Vancouver Island character to stand on its own over ice or with a splash of soda.

We precisely blend our Wildflower Traditional Mead with the 2013 Schönburger from Venturi-Schulze Vineyards in the Cowichan Valley and spirit from Stillhead Distillery in Duncan. We then add 32 different botanicals.

Each botanical is extracted completely separately from each other and then blended after extraction - this allows us to really dial in the exact flavour we want, regardless of seasonal/regional changes to the botanicals. This also allows us to give each botanical the exact amount of extract time it needs (sometimes that's 2 days, sometimes that's 2 months!) We practice this blending method for all of our apéritif wines!

Kina-Rouge

The first quinquina style wine made in Canada since World War II

It tastes like a cross between a lovely blueberry pie and a Gin & Tonic in wine form!

For centuries, the British, French and Roman empires were ravaged by the fevers of malaria. A treatment was finally discovered in 1633, in the bark of the Cinchona tree; quinine. The British took this bitter medicine and added it to sweetened water to make more palatable tonic water for their soldiers abroad. Gin followed soon after. Across the Channel, in 1820, French chemists solved this bitter problem by isolating quinine from the bark and adding it to the wine rations of the Foreign Legionnaires. The result? The famous tonic wine is known as Quinquina. This is our take.

The base wine is a blend of 2015 Agria red wine from the Cowichan Valley, aged in used French oak for 4 years, this red wine is blended with a BC blueberry mistelle (unfermented blueberry juice fortified with spirit from Stillhead Distillery ). We then add 10 different botanicals including quinine, chamomile, coriander and cinnamon. Meant to be enjoyed on ice, with a twist of lemon and perhaps a splash of gin.

Dry Vermouth

750ml - 18% Alc./Vol.

We wanted to create a Dry Vermouth that was perfectly tailored to the best Martini of your life and just darn good on its own over some ice.

We're really proud of how this one turned out.

Our favourite way to drink this is in a Vermouth & Tonic with Rootside's Classic Dry Tonic Mix; it's the unexpected new usual for us at home!
